Here is a quick breakfast casserole.
Prep; 10 minutes
Bake: 40 minutes to bake
Makes 6 to 8 servings
1 bag of frozen spinach or kale – defrost and drain
1 bag of frozen potatoes, diced – defrost
16 to 20 oz of breakfast sausage or any ground beef/lamb/turkey, if raw cook and add spices
grease a baking dish and mix those 3 ingredients together.
10 eggs, whisk and pour over the mix, then bake for 40 to 50 minutes at 350 degrees.
Our Box will be doing the official weekly Game workouts on Friday nights. Oh, I am getting excited, even so its still some time away.
I will be starting with OLY lifting at the end of January. Its a new program that they are starting. It fits perfectly with my training days. Monday, Wednesday and Saturdays.
